Ingredients
- Olive oil
- 2 eggs
- 1 head of cauliflower
- 1 pound shrimp
- 1 head of brocolli
- 1 red bell pepper
- 1 cup onion
- 3 cloves garlic, minced
- 3 tbsp soy sauce
- 2 tbsp water
- 1 tbsp rice vinegar
- Black pepper
Directions
- The first step is to make cauliflower rice. This can be bought prepackaged, but is very simple to make with a head of cauliflower. Add cauliflower to a food processor/blender and chop; or cut by hand. The goal is to have rice sized pieces of cauliflower.

- Heat oil in a wok over medium heat. Add both eggs and cook to over-hard or your preference. Add to a large bowl when done.

- Next, add cauliflower rice to the wok. Add any seasonings of choice (black pepper, etc). Let cook without stirring for 4 minutes. It should start to brown on the bottom. Transfer to the bowl with the eggs and mix.
- While the cauliflower rice is cooking, cut the head of broccoli into smaller florets. Cut the red pepper and onion into small pieces and mince the garlic.

- If needed, add more oil to the wok and let heat up. Then, add the onion, broccoli, bell pepper, and garlic. Cook for about 7 minutes, stirring occasionally. The vegetables should start to brown/char. When done, add to the large bowl with the cauliflower, rice, and egg. Mix together.
- Time for the shrimp. Make sure is is thawed first! Whether it is uncooked or already cooked, add it to the wok and cook it until opaque. This means that the shrimp should be white with red/pink coloring. Stir regularly. For uncooked shrimp, this may take 5+ minutes. For cooked shrimp, it may take only 2 or less; the reason for doing this is to heat it up. Add the large bowl and mix everything together. The photo below is what we are aiming for.

- Mix the soy sauce, water, and rice vinegar together in a cup. Add to the wok. Let it start simmering and heat up. Once it is heated and is beginning to boil (this may take anywhere from 15 seconds to a minute) add all the ingredients from the large bowl back into the wok. Stir frequently to make sure the sauce is mixed in. Let cook for 3 minutes, stirring regularly.
