This recipe has been modified from the original recipe from Better Homes and Gardens baking cookbook.

Ingredients

  • 2 cups flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ¼ tsp ground nutmeg
  • ⅛ tsp ground ginger
  • 4-5 bananas
  • 2 eggs
  • 1 cup sugar
  • ½ cup vegetable oil
  • (optional) 1 tsp banana extract
  • 1 cup chocolate chips

Directions

  1. Preheat oven to 350 °F. For thinner bread, spray a 13×9 inch dish with non-stick spray. For thicker bread, spray a 8×8 inch dish with non-stick spray.
  2. In a large bowl, combine flour, baking powder, baking soda, ground cinnamon, salt, ground nutmeg, and ground ginger and whisk until combined. Make a well in the center of the mixture.
  3. In a different bowl, peel and mash the bananas using a fork, potato masher, or utensil of choice.
  4. Add the eggs, sugar, vegetable oil, and optional banana extract to the mashed bananas and mix together.
  5. Add the banana mixture to the flour mixture. Stir until just moistened. The batter will be lumpy. Fold in chocolate chips or any other nuts/topping of choice.
  6. Add batter to the greased dish and spread evenly.
  7. I intentionally under-cook the banana bread, such that the middle is still fudgey. The rule of thumb is to use a toothpick and check near the center; if it comes out clean, the banana bread is all done.
    Here are some suggested times; do not hold me to these. As it dries out, the top will get bigger and deeper cracks.
    9×13 inch dish: 35 minutes
    8×8 inch dish: 40 minutes
    Add foil around the edges to prevent browning after a half hour of bake time, if necessary.
  8. Once done baking, let sit for 15 minutes and remove from pan. In theory, you should then wrap/put it container and let sit overnight before slicing. However, don’t worry about giving in and slicing it now.
  9. Store in the refrigerator.
